Bellingham, WA was placed on our recent road trip itinerary for one reason: to see my step-sister that I hadn’t seen in over a decade. I figured since we were going to be so close in Seattle, we would make the special trip up there to see each other!
We didn’t get to see much of Bellingham, although what we did see was beautiful. It’s so green and there are so many trees. It perfectly embodies what I would think of when the term Pacific Northwest comes to mind. I look forward to going back one of these days.
What I can tell you we did in Bellingham was eat and drink, of course! So, really, this post is mostly about food!
We went to dinner at Boundary Bay Bistro. Even though we were there for such a short time, we just HAD to try at least one place with local beers. We sampled some of their beers with a flight – Micah liked the oatmeal stout and I went with the IPA. I’d probably say it wasn’t the best of beer we tried, but it wasn’t too bad.
At Boundary Bay, we ate:
- Pretzels with Mustard
- Oysters
- Salmon Chowder
- Grilled Salmon and Asparagus
Everything was quite delicious!
Old Town Cafe
For breakfast the next morning, we ate at Old Town Cafe since they had a TON of vegetarian options to choose from, and even vegan options! Seriously, it was hard to choose! It’s a funky, cozy little place right in downtown where we met up with my sister for a little farewell breakfast.
For breakfast, I had the Southwest tofu scramble, which was actually vegan. It came with potatoes, avocado, salsa and tortillas! On the side I also tried their vegetarian biscuits and gravy because it’s pretty rare to find a place that does a good veggie gravy. I just happen to love me some B & G!
Micah had the Farmer’s Skillet Deluxe – home fries with onions, peppers, mushroom and celery, served with cheese, salsa and sour cream, along with two eggs and toast. Nice and hearty!
And that was the extent of our short stay in Bellingham! We didn’t explore much this day, as we wanted to get down to Seattle so we could enjoy our short overnight stay in there. Can’t wait to come back up to this beautiful little town and see what it’s really about.
